Before going WFPB I was known for my Jerk Chicken. I was asked to make it again for my neighborhood progressive dinner. I used jack fruit instead and everyone thought it was pulled pork. It was a huge hit!

This is an easy recipe but takes some clock time as it is cooked twice to get the right consistency and the caramelization of the sauce. It can be done a day ahead of time as well.

Put these on a bun with a simple coleslaw and make sliders for a tasty appetizer!

Jerk Jack Fruit Sliders

These make a fun snack or dinner and they are always a hit with the neighbors. I use canned green jack fruit for this recipe. Fresh jack fruit is much too sweet.

Ingredients

  • 2 Cans Green Jack Fruit
  • 1/4 Cup Brown Sugar
  • 1 Cup Jamaican Jerk Sauce See recipe
  • 8 Hawaiian Rolls or slider buns
  • 1/4 Wedge green cabbage
  • 1 Carrot
  • 4 Sprigs Cilantro Optional
  • 1 Mango Optional
  • 1/4 Vidalia or sweet onion Optional

Instructions

  • Make the jerk sauce according to the recipe.
  • Open and drain the Jack Fruit. Discard the liquid. Smash each piece with your fingers. Trim off any hard pieces you cannot smash easier. Some seeds are harder than others as well. Add the saved pieces to an insta-pot.
  • Use a wooden spoon to stir in the jerk sauce and coat the fruit. You can use more sauce if necessary to make certain it is all coated.
  • Set your Insta-pot for 59 minutes. 
  • Move the fruit to a baking dish and sprinkle with brown sugar. Bake at 400 º F for 15 minutes or until the sugar has caramelized. It is ok if your fruit blacked a bit. You want that! Pop your slider buns into the oven at the last 5 minutes to warm them.
  • Shred your cabbage and carrots. Add mango and Vidalia onion if desired. 
  • To assemble, arrange two open buns on each plate. Top with the jerk jack fruit. Add a little jerk sauce if you wish. Garnish with the slaw and cilantro and serve.

Notes

This is a Snap Pea Sheep Recipe.
If you do not have an insta-pot or pressure cooker, you can cook this in a slow cooker to 4 to 8 hours. 
I smash the fruit pieces with my fingers and cut away any pieces the hard pieces and seeds. This also breaks up the pieces to look a little more like meat. I often end up discarding 1/3 of the can. Trader Joe's has canned green jack fruit. 
Baking the cooked jack fruit with the sugar gives the fruit a little charring and makes it seem a little more like meat. The baking time can vary on this. I have left it in the oven at 325 º F for an hour to keep it warm.
Use the same cooking technique using your favorite BBQ sauce to make jack fruit barbeque.
