Recently I prepared one 16 oz package of frozen black eyed peas!
#1 I started with a “meat” loaf. I made some horseradish ketchup to go on top as w ell as some roasted cherry tomatoes.
On meal #2, I stuffed some large portobello mushroom caps with a tomato slice and my black eyed pea loaf filling. I sprinkled on a little panko and thought of oysters Rockafeller!
For meal #3, I made four patties by adding a little breading, crushed walnuts and flax seed to left over loaf and rolled the patties in Ian’s panko crumbs.
Still having 2 patties left, meal 4 was patties baked with left over mushroom soup – which made a delicious gravy!
You can follow any recipe to prepare dried peas or beans and just season mildly so you can use them for multiple applications.
Think about seasoning with Italian or Chorizo seasonings and put some on a pizza or in a taco.
Make a dip!
Add to rice and make a pilaf.
