Carrot dog with red cabbage chow-chow
Every cookout seems to start with hot dogs, burgers, barbeque, bratwurst or something I am just no longer part of. I've seen many recipes for a carrot dog and after several fails, I think I got it right! These take place of a hot dog for me and I am happy for it!These are definitely better if they are cooked on your grill with some smoke chips. Otherwise use a grill pan so you can get grill marks on your dogs.

- Grill or grill pan, smoking gun optional
Ingredients
- 4-6 Large carrots
- 4 Hamburger buns
- 1 tbsp Hickory smoked salt
- 6 tbsp Liquid Smoke
- 6 tbsp Worcestershire sauce
- 1 tsp Garlic
- 1 Recipe Red cabbage chow-chow
Red cabbage chow-chow
- 1 Cup Finely chopped red cabbage
- 2 Dill pickle spears
- 1/2 Vidalia or sweet onion
- 1 Red habanero Substitute Serrano or jalapeño
- 1 Tbsp Pickle juice
- 1 Tbsp Rice vinegar
- 1/4 Tsp Garlic
- 1/4 Tsp Himalayan salt
- 1 Tsp Honey Optional
Instructions
- Peel carrots. Trim to be slightly longer than the buns.
- Place of a hot grill pan to get grill marks. Allow to cook until it starts to be fork tender.
- Mix together the marinade and place the hotdogs in the marinade. The longer they marinate the better but at least 30 minutes to impart that smoke flavor.
- If using a smoking gun, use a sealable bag for the marinade and fill the bag with hickory smoke. You may want to replenish the smoke several times.
- Make chow-chow.
- When ready to serve, return to the grill to warm the carrots through.
- Open buns, place on grill to warm.
- Assemble hotdogs and top with mustard and chow-chow.
Red Cabbage chow-chow
- Finely chop the cabbage, pickles and onions.
- remove stems and seeds from your pepper of choice. Finely mince the pepper.
- Combine vinegar, juice, honey, salt and garlic into a bowl. Add chopped vegetables.
- Toss well. For best flavor, allow to marinate for 20-30 minutes before serving.

There are many ways to top a hot dog!
I like mustard, sauerkraut and onions on mine so this chow-chow is a close contender!
I also like chili-dogs but never could handle the heartburn. Enjoy a guilt-free chili dog and use quinoa as your "meat".
Years ago, I worked in Winslow Arizona as a cook. Everyone liked the footlong hotdogs with ketchup and onions.
The point is to not think of these as carrots, think of them as the hot dogs you used to love and go "dog wild"!
