This is such an easy recipe, there is NO RECIPE NEEDED!

Sometimes you just need a good idea! Well this idea takes just minutes and uses leftovers too!

If you are like me, you might get a pizza on those nights you just have no time to cook! There are WFPB pizzas to be found out there or maybe you made your own.

Then you have left over pizza. Not so inviting once it is cold so it will probably live in your fridge until it’s ripe enough to throw out!

What to do with left over pizza?

Cut into 1″ squares, toast them and toss onto a salad!

This is a simple salad of little gem lettuce, tomatoes, mini assorted peppers, jalapeños, cucumber, red onion, green olives and black olives. Pretty much things I would like on a pizza.

Throw in artichokes, spinach, kale, squash, other mixed lettuces, fresh basil or even pineapple if you like it on pizza!

Left over marinara sauce? Make it into a simple Italian dressing! I used equal parts marinara, umeboshi plum vinegar and water to which I added garlic, herb de province and Calabrian chili.

What I ended up with was a very tasty, deli style salad with these little bits of hot margarita pizza and a tasty Italian salad dressing!
