I use capers instead of anchovies in this dressing to make it vegan. It is creamy, oil free and a delicious substitute for the classic Caesar!
Green Goddess dressing is a great alternative to the classic Caesar dressing.

Caesar Salad and Dressing
Classic Caesar salad is a simple salad of romaine lettuce, croutons and parmesan cheese. The dressing is more complex. Traditionally made with a fresh egg, oil, parmesan cheese and anchovies. Very caloric and hard to resist! This WFPB version let's you enjoy the goodness without the guilt!

Caesar Dressing
- Place ingredients in a blender and blend until smooth.
- Adjust to taste. Serve.
Caesar Salad
- Wash and dry romaine leaves. Tear into bite sized pieces.
- Select olives and drain them. Place in salad.
- Carefully olive red onion very thin. You may use a vegetable peeler if desired.
- Toss in the dressing and top with croutons.
Croutons
- Cut baguette or bread into one-inch squares.
- Mix together lemon juice and seasonings into a large bowl. Allow the Italian seasoning to soften. Add more lemon juice if necessary so you have a liquid and not a paste.
- Toss bread cubes in lemon juice mixture.
- Arrange bread cubes in a baking pan and place in oven. Bake for 12-15 minutes at 350°F or until golden and crunchy.

The Kala Namak replaces that egg flavor in the classic version of the dressing.
The capers or nori replace the anchovies. Use both if you like the fishy brininess of anchovies.
Add a whole avocado and a handful of basil to turn this dressing into a version of Green Goddess that is simple and delicious!
If you miss the Parmesan, you can place salted almonds in a blender and grind them to a coarse powder. Use the almonds as a cheese replacement! If that doesn't work for you, Follow Your Heart or Miyoko both make a nice vegan cheese.
