My husband’s first attempt to make bread resulted in one of the best tasting pumpernickel breads I’ve ever tasted. It was better than any bread I’ve ever made with my machine.

This bread is rich, dense and flavorful!

Use it when making my Eggplant Pastrami Reuben Sandwich or cut a few pieces up and toast them for my Deli salad.

We used the Zojirushi Virtuoso bread maker. The directions on this bread maker say to just dump all of the ingredients in and let the machine do the mixing. This doesn’t work so well in my opinion. If the dough is the slightest bit too dry, it all just wads up and does not make a pretty loaf.

Mix the dry ingredients together, then the wet ingredients. Add the wet ingredients to the machine then sprinkle on the dry ingredients. The Zojirushi kneads the dough twice, stopping once the the addition of nuts or fruit.

When it pauses for additions, I take the loaf out and gently reshape it. I also open the machine again and reshape it after the second kneading.

Why not just use a baking pan? Good question. The machine bakes the bread perfectly, gives it a lovely crust and saves me from watching it.

Black Forest Pumpernickel bread

This was made in my zojirushi bread maker. However, it was mixed and kneaded in a bowl before adding to the machine. It could have easily been baked in an oven.

Ingredients

  • 1 1/2 Cups Warm water
  • 4 TBSP Apple Cider Vinegar
  • 4 TBSP Mashed potato
  • 6 TBSP Organic Molasses
  • 4 TSP Himalayan Salt
  • 1 2/3 Cup Rye flour
  • 1 1/3 Cup Buckwheat flour
  • 1 Cup All Purpose Flour
  • 1/4 Cup Cocoa Powder Organic Belgium
  • 4 TSP Caraway seeds
  • 2 TBSP Organic yellowCorn Meal
  • 2 1/2 TSP Yeast Red Star brand active
  • 4 TBSP Xanthum or Guar Gum I used "Pamala's Not Xanthum/Guar"
  • 3 TBSP Unsweetened apple sauce

Instructions

  • Use part of the water as needed to activate the yeast per package directions. 
  • Mix dry ingredients. Stir to mix well.
  • Place mashed potatoes and remaining water in your food processer with your dough blade. Process for a few seconds to create potato water. 
  • Your yeast should have risen considerably. Otherwise, it is inactive and you need another package. Once it has risen, it can be added to the potato water in the food processor.
  • Add dry ingredients in with the food processor and turn on the dough cycle. 
  • Once the dough is mixed, place evenly in your bread maker. Set to medium crust, whole wheat cycle.

This is a Snap Pea Sheep recipe.
This was made in my Zojirushi bread maker. However it was mixed and kneaded in a bowl before adding to the machine. It could have easily been baked in an oven at that point but I don't know how much the extra kneading in the bread machine made a difference in the texture. 
The Zojirushi kneads the ingredients for close to an hour while the yeast works. When  the bread maker beeps for any additional ingredients, open the bread maker to smooth it out again. Use a spatula to scrape any batter from the sides. The Zojirushi sometimes wads the loaf up unevenly which is why I do not just place the ingredients in the machine and turn it on as directed. 
If baking in the oven I would suggest baking at 400 ° F for 35 - 45 minutes.
