Cajun Lentil Soup
Ingredients
- 2 Cans Brown lentils
- 3 Stalks Celery
- 1 Bell Pepper
- 1 Medium Sweet Onion
- 2 TBSP Slap Yo Mama Cajun seasoning See notes
- 1 32 OZ Vegetable Broth
- 2 Bay leaves
- 1/2 TSP Coarse ground black pepper
- 1/4 TSP Cayenne pepper
- 1/4 TSP Garlic powder
- 1 Peeled and diced tomato
Instructions
- Remove strings and ends from celery. Dice into a medium dice.
- Peel and dice carrots into a medium dice.
- Peel and dice sweet onion into a medium dice.
- Clean and de-seed the bell pepper. Dice into a medium dice.
- Open lentils and add contents to a large sauce pan. No need to drain.
- Add all diced vegetables, broth and seasoning to the sauce pan.
- Cook on medium heat until the vegetables can be pierced with a fork.
- Spoon into four bowls.
