Cajun Lentil Soup

Ingredients

  • 2 Cans Brown lentils
  • 3 Stalks Celery
  • 1 Bell Pepper
  • 1 Medium Sweet Onion
  • 2 TBSP Slap Yo Mama Cajun seasoning See notes
  • 1 32 OZ Vegetable Broth
  • 2 Bay leaves
  • 1/2 TSP Coarse ground black pepper
  • 1/4 TSP Cayenne pepper
  • 1/4 TSP Garlic powder
  • 1 Peeled and diced tomato

Instructions

  • Remove strings and ends from celery. Dice into a medium dice.
  • Peel and dice carrots into a medium dice.
  • Peel and dice sweet onion into a medium dice.
  • Clean and de-seed the bell pepper. Dice into a medium dice.
  • Open lentils and add contents to a large sauce pan. No need to drain.
  • Add all diced vegetables, broth and seasoning to the sauce pan.
  • Cook on medium heat until the vegetables can be pierced with a fork.
  • Spoon into four bowls.

Slap You Mama is a nice Cajun spice blend but it has a high salt to pepper ratio. 
You can add more cayenne, garlic and black pepper to your soup or just replace the blend with those ingredients plus celery seed then salt it to your taste.
