A traditional and time-honored side holiday side is green bean casserole with cream of mushroom soup and crispy onions. This version celebrates the beans and allows them to stay crisp. Air-fried onions add the crunch.

Make a lovely gravy with mushrooms to replace the traditional mushroom soup. This is an easy recipe for mushroom gravy and very tasty.

Green Beans with Crispy Onions

We all grew up with the green bean casserole made with Condensed Cream of Mushroom soup and fried onion rings on top. This is a waist friendly, vegan and gluten free version. It is so easy! The onions are air fried and the beans are coated in mushroom gravy to give them that creaminess! I use vegan and gluten free panko bread crumbs for a little crunch and texture.

Ingredients

  • 1 TBSP Ground Flax Seed
  • 2 TBSP Rice or Apple Cider Vinegar
  • 2 TBSP Water
  • 1 TSBP Dijon Mustard
  • 1/2 TBSP Himalayan Salt
  • 1/2 TBSP Black Pepper
  • 1 Cup IAN'S Gluten Free Organic Breadcrumbs See Notes
  • 2 TBSP Organic Corn Starch
  • 2 TBSP Almond meal, or gluten flour
  • 1 LB Haricot Verde or green beans
  • 1/2 Cup Mushroom Gravy See Notes
  • 2 Whole Sweet Onions Vidalia or 1015

Instructions

  • Combine first 5 ingredients in a shallow bowl. Stir and set aside. 
  • Peel and slice onions. Beak into rings. Slice in half if you want smaller pieces.
  • After 5 minutes your flax seed slurry should be about like pancake batter. If too thick, add a little vinegar or water.
  • Pour panko into a shallow bowl. Set up your dipping station and rack for your onion rings. 
    Onions, breading, air-fry
  • Put onions in a bag with the flour and cornstarch and shake to coat.
  • Dip onions in flax mixture then bread crumbs. It is easier to use a fork in each hand to dip with one and coat with the other. Carefully place them on your air-fryer rack. 
    Onions, air-fried, breaded
  • Bake onions at 400 °F for 8 minutes. Switch tray positions and bake for another 8 minutes. They should be to be crispy but just browning.
  • While the onions are baking, wash and trim the green beans. Place into saucepan, cover with water. Cover with lid and cook the beans for 10 minutes. 
  • Drain the water from the beans. Put green beans into a casserole dish. 
  • Toss the beans in gravy. Season with salt and pepper to taste. As a fresh herb option you can add a little dill or Herb De Province. 
  • Set green beans and onions aside until 5 minutes before everything is ready. Then top the green beans with the onions and put the casserole dish in the oven to warm and finish crisping the onions.

This is a Snap Pea Sheep Recipe.
Ian's gluten free organic panko has no egg or oil. You can sub any flour or panko, just make sure the product has no egg.
Make your own mushroom gravy or use store bought. In a pinch I will use Pacific organic mushroom gravy. It has canola oil and is not 100 % WFPB compliant but I find it difficult to find anything pre-packaged without oil.
Another variation to the recipe is to add the yogurt, silken tofu or cashew cream to the gravy  to make it a bit more like the traditional green bean casserole. 
A slurry is made by mixing a dry ingredient with a little liquid to liquify it before adding the rest of the liquid. It makes it easier to mix in a dry ingredient without lumps.
