The ingredients for this sweet potato dish are in the title! The hardest part of this recipe is peeling and cutting the potatoes.

This recipe is really too simple to be out here, but I found myself wanting to recommend it as a side to some of my other dishes.

Black-eyed peas, okra corn bread, and beet, cabbage and kraut salad!

Orange, maple sweet potatoes

This is a very simple recipe and needs to be included for the technique. These are bakes in a covered pan with orange juice, so they are steamed and roasted at the same time. They are cut like french fries so they are easy to eat.

Equipment

  • Baking pan with lid
  • Pastry brush

Ingredients

  • 6 Medium sweet potatoes
  • 1 cup Orange juice
  • 3 tbsp Organic maple syrup

Instructions

  • Preheat oven to 400°F.
  • Peel sweet potatoes and cut off tough ends.
  • Use Large knife and cut sweet potato lengthwise into 1/2" slices. Cut each slice into 1/2" pieces as you would French fries.
  • Place potatoes in a covered baking dish. Add orange juice. The juice should completely cover the bottom of the pan and be about 1/4" deep. Add more if necessary.
  • Use a pastry brush to dab each fry with maple syrup. The syrup will candy slightly.
  • This is optional but a light sprinkle of Himalayan salt will enhance the fries.
  • Bake for 45 minutes at 400°F.
  • Serve and enjoy.

Variations you might try is to change up the cooking liquid. Try pineapple juice instead of Orange. 
Use lime juice and sprinkle on some chili powder and cumin to make a savory dish. 
Watch the time. I cook these in a convection oven> they might be ready in 30 minutes because of the cuts.
