These roasted tomatoes are simple dish but goes incredibly well with any pasta dish! It makes a great side all it’s own and takes just minutes to prepare. Use tomatoes on the vine if possible for an elegant presentation.

Roasted Campari tomatoes with basil

Simple but very flavorful. Serve these as a side or add them on top of a dish that you would ordinarily use a tomato sauce to. Great on an alfredo style pasta.

Ingredients

  • 1 Pint Cherry or Campari tomatoes
  • 1 Tbsp Calabrian chili paste Calabrian Chili is very hot, you can add more if you like.
  • 1 Tsp Minced garlic
  • Salt and pepper to taste
  • 8 Basil leaves
  • Water

Instructions

  • Wash tomatoes and place in a baking dish.
  • Add water to yield about 1/4" deep in your baking dish.
  • Combine garlic and chili paste. Sprinkle on top of tomatoes. Finish with salt and pepper.
  • Bake for 15 minutes in a 350° oven.
  • Toss in the juices, move to plates and top with fresh basil.

Calabrian chili has a flavor all it's own. I purchased chili flakes and chili pods online through Amazon and Yummy Bazaar.  Tutto Calabria is one brand I found. Tutto Calabria products are packed in oil so for a long time I just used red chili flakes or chili pods. 
Chili pods can be soaked in water to soften then be used sliced or diced. The pods can also be put into a grinder to make ground chili powder. 
When I found the Trader Joe's brand, it was cheap, flavorful and seemed to have a very little amount of oil. 
Calabrian chili's are a type of pepperoncini pepper and seem to be exclusively from Italy.
