This is a typical salad you will find in most Mediterranean restaurants. Using cauliflower is a real time saver because there is no cooking involved.

Ingredients

  • 1 Cucumber Organic English preferred
  • 1 Heirloom tomato
  • 1/4 Bunch Fresh Parsley
  • 1/4 Head Cauliflower More as needed
  • 2 TBSP Lime juice
  • 1/4 TSP Himalayan salt
  • 2 Green onions

Instructions

  • Chop cucumber into a small dice. You can use the skin if the cucumber is organic, otherwise you should peel it. 
  • Peel and trim the tomato then slice into a small dice. 
  • Wash and chop the parsley.
  • Wash the cauliflower and place in blender or food processor and pulse 3 to 5 times until cauliflower is broken dlwn like a couscous or grain. You want about a cup but it you need more, empty the blender first or you will have a cauliflower smoothie. 🙂 
  • Put all ingredients in a bowl, add the salt then the lime juice then gently stir to mix the salad. 
  • Clean the green onions and chop into a small dice.

I really have no variations for this recipe because I like it just the way it is! You can experiment with it by adding fresh mint as well as the parsley.
Use cilantro instead of the parsley and add corn or rinsed black beans to make a Mexican version.
Of course you can use couscous or quinoa instead of the cauliflower.
For color variation use a green heirloom tomato and try broccoli instead of the cauliflower.
