Instructions
Lightly toast the bread.
Cut two slices of "cheese" from your wheel. You want about 1/4 cup per sandwich.
Add yogurt if necessary to make the "cheese" a little creamier.
Toss in the pimentos and stir to incorporate.
Slice the bread in half. Spread pimento evenly onto the toast and assemble your sandwich.
Notes
This is a Snap Pea Sheep recipe*After 6 hours my small ramkin of cheese could be cut but it could also be easily spread. The next day I cut some from my larger ramkin and it was more sense so I added some coconut yogurt to make it smoother. Any type of bread could be used. Try this with my pumpernickel bread! Sourdough would be delicious as well. Some people serve lettuce and tomato slices with their pimento cheese. Garnish with a pickle of some green olives.
