Who doesn’t cranberries in the fall? Cranberry and orange is a classic pairing and this bread smells heavenly when it is baking. Spicy and tart, this will be a go to bread for the holidays.

Cranberry Orange Nut Bread
This is a tasty bread made with fresh cranberries and zesty oranges with chopped walnuts for an added crunch. It is a dense bread with just the right amount of sweet .

Ingredients
- 2 Cups Cranberry-Orange Relish See notes
- 2 Cups Organic whole wheat flour See notes
- 1 TBSP ea Baking soda, Baking Powder
- 1/4 TSP Himalayan Salt Optional
- 1/2 Cup Unsweetened organic applesauce
- 3/4 Cup Organic brown sugar or sweetener of choice
- 2 TBSP Ground Flax Seed
- 6 TBSP Orange Juice
- 1/2 Cup Chopped walnuts Optional
Instructions
- Preheat oven to 350 Degrees F
- Put flax seed in a bowl with the orange juice, stir and set aside for 5 minutes.
- Make Cranberry-orange relish but do not add agar agar, cornstarch or kuzu root.
- Mix the dry ingredients and nuts together in a bowl.
- Mix cranberry sauce, applesauce and flax seed together.
- Stir the cranberry mixture into the dry ingredients. Stir to incorporate into a batter
- Lightly grease a loaf pan with coconut oil and dust with flour.
- Pour batter into a the loaf pan and bake in the center of the oven for 40 minutes of until two toothpicks come out clean.

Corn starch and kuzu root work are used to thicken the relish while agar agar sets like a gelatin. None of these starches are necessary in bread. Do not add them to your cranberry sauce if you are using the sauce to make this dish.
The cranberries should be the consistency of mashed bananas.
Alternatives:
If you want to make this gluten free you can substitute any gluten free flour. You may need to add 1 TBSP of Organic Xanthum gum if it is not present in your substitute.
Substitute the cranberries for 4 mashed bananas to make a delicious banana bread!
