We used to make Ambrosia for Thanksgiving! It was mandarin oranges, mini marshmallows, maraschino and whipped cream! It was delicious but no longer on my diet for a number of reasons! I want something fresh and light so here it is!

Fruit Salad

This is a fresh finish for an otherwise heavy meal. Simply fruit with a little bit of non-dairy yogurt and sweetened with a little honey. the yogurt and honey are totally optional as the fruit is the star here.

Ingredients

  • 3 Bananas
  • 3 Oranges
  • 1 Cup Strawberries
  • 1 Cup Grapes
  • 1/4 Cup Pecan pieces
  • 1/2 Cup Non-dairy Yogurt See notes
  • 3 TBSP Honey

Instructions

  • Peel and Supreme the oranges over your bowl. Supreme simply means to cut the segments away from the membrane of the orange. Squeeze the empty membrane to get the remaining juice from the orange. 
  • Wash and slice your strawberries. Wash your grapes and toss them in. 
  • Combine the yogurt and honey into a bowl and stir into fruit. Add in your pecans if you decide to use them. Toss to coat. 
  • Peel your bananas, slice them into the bowl and toss to coat. 
  • I recommend chill covered for at least 15 minutes. 

Notes

This is a Snap Pea Sheep recipe!
 
Bananas have a tendency to turn brown, The yogurt will prevent that to a point. Tossing them in last to avoid bruising them helps too. If you do not use the yogurt, you may want to add a little more orange juice and the honey mainly to keep your fruit from browning.
