Creamy Coriander Dressing
I make a lot of soup and salad combinations and I wanted a salad with an Indian inspired dressing to accompany my soup. I created this delicious dressing for a garbanzo bean salad that I served on a plate for myself and stuffed into a pita for my son. It was light but complex.

Ingredients
- 2 Tsp Tahini
- 1/2 Tsp Cumin
- 1/4 Tsp Coriander
- 3 Tbsp Lemon juice
- 1/2 Tsp Garlic
- 1/2 Tsp Fenugreek
Instructions
- Melt the tahini into the lemon juice to make a thinner creamy base. Move to a bowl or salad dressing carafe.
- Add seasonings.
- Add salt and pepper to your taste.
- Shake well and enjoy.

This is a delightful dressing that can be used as is for a mayonnaise replacement or thinned with a little more lemon juice or vinegar and used as a salad dressing.
The fenugreek adds a very pungent flavor and can be omitted if you don't care for it. The coriander is flavorful enough on it's own.
