Savory Peppercorn dressing

I wanted a salad and dressing that would go well with a spicy Cajun soup. This is a creamy dressing that I came up with! I used Old Bay seasoning and added garlic and pink peppercorns. It was delicious and quite unique.

Ingredients

  • 1 Tbsp Pink or green peppercorns
  • 1/2 Cup Unsweetened Coconut yogurt
  • 1 Tbsp Umeboshi Plum Vinegar
  • 2 Tbsp Lemon Juice
  • 1 Tsp Fresh thyme
  • 1 Tsp Old Bay Seasoning
  • 1/4 Tsp Garlic
  • 1/4 Tsp Himalayan salt

Instructions

  • Whisk together ingredients. Set aside for 10 minutes.

This is a Snap Pea Sheep recipe. 
 
I used fresh thyme. If you do not have fresh, use dried but use about half the amount. 
I really wanted green peppercorns for this but didn't have any on hand. Green, pink  and black peppercorns all have a different flavor so it is your preference. Don't be afraid to try any of the three.
