Hibachi restaurants generally have a ginger dressing to accompany the simple salad they serve with the meal. It is light and tangy and thankfully easy to make as well.
Typically grated carrot is added to the dressing. Totally optional here as I was looking for simplicity! (actually I just forgot all about the carrot when I made my dressing).
If you are looking for a hibachi type meal, round your meal out with tofu and walnut, dashi broth and a simple side salad with this ginger dressing.

Japanese Hibachi Ginger dressing
This ginger dressing could easily be used on any Asian variety of salad whether it be Korean, Thai, Vietnamese or Japanese. It is light and delicious!

Ingredients
- 3 TBSP Plant yogurt I use So Delicious unsweetened coconut milk yogurt
- 1 TSP pureed ginger
- 3 TBSP Umeboshi plum vinegar
- 1/2 Cup Finely Grated carrot Optional
Instructions
- Add all dressing ingredients together and shake or stir to incorporate. Dressing is done!
- Peel and finely grate a carrot and add to dressing. Optional.
