Salad with oranges, carrots, avocado

Orange-carrot salad

More than oranges and carrots. This is a very substantial salad.

Ingredients

  • 2 whole Carrot
  • 1 whole Orange
  • 1 whole Avocado
  • 6 Cups Mixed field lettuce
  • 1 Cup Baby kale
  • 1 Cup White or red seedless grapes
  • 1/4 whole Pineapple Optional
  • 1 cup Fresh blueberries Optional
  • 3 whole Radishes
  • 1/8 whole Sweet Onion Adjust to taste
  • 1 whole Cucumber

Orange Dream Dressing with ginger

  • 4 TBSP Coconut yogurt unsweetened
  • 2 TBSP Umeboshi Plum Vinegar
  • 2 TBSP Ginger puree Optional
  • 4 TBSP Orange juice
  • 1/2 TSP Onion Powder Optional

Instructions

  • Wash the kale and field greens. Cut into bite sized pieces and place in a large mixing bowl.
  • Peel and grate carrots into the mixing bowl with the salad greens
  • Wash blueberries or grapes and add to the salad greens.
  • Peel and chop cucumbers and onion, add to the salad greens.
  • Peel and segment the orange, set cut segment aside. Do your cutting over a small bowl to capture the juice. Squeeze the peels to  capture any juice as well.
  • Slice the mini peppers in half, remove the seeds. Slice thinly and add to the salad greens.
  • Slice pineapple into spears. Cut three or four spears into tidbits and add to the salad greens.
  • Slice avocado and set aside.
  • Mix together orange juice, ginger and coconut yogurt. Add any additional orange juice if you did not get enough from cutting the orange. Add in vinegar and stir until smooth.

There are may ways to make this salad. Combine all ingredients or hold out a few and place them on top for presentation and interest.
I had some grapes that were getting a little marginal. I brought them to a boil then baked them at 25o ° F for an hour to dehydrate them. This gave them an interesting texture and flavor but did not dehydrate them enough to make raisins. It would take a dehydrator for that but I recommend that for grapes that are a bit past their prime.
You can include all or part of the fruit here. The grapes, pineapple and blueberries play up the carrots and make this a fun and healthy salad. 
I chose to arrange pinwheels of orange and avocado slices on top of my salad. 
The ginger added to my Orange Dream dressing really play well with the carrots.
